Appearance, taste and texture are the name of the game when judging competition barbecue. At the Meridian Civic Center it was a coming and going of people signed up to judge the pit crews’ finished products at the National Championship Barbecue Cookoff last Saturday. In charge of the judging proceedings were Jean and Harvey Gebhard from the Lonestar Barbecue Society. They were aided by an army of Lonestar and local assistants, making sure the proceedings were up to sanctioned cookoff standards and going smoothly.
